Prep cooler top inserts (across from stoves/cooking line) were at 4 deg C or less. Probed several inserts on both the right and left coolers. However, prep cooler bottom drawers were at 10-11 deg C (Sous chef has indicated that the top and bottom are on different compressors). Bottom compartments of the two prep coolers are not in use (ie. no foods stored inside) and have been scheduled to be repaired.

Discussed with sous chef regarding the inserts on the left side that are often left open (sauces, sliced tomatoes, mayo, etc). Only half fill these inserts with enough food to use within 4 hours (and discard what isn't used at the end of this period).

After repairs are complete, send copy of repair invoice to district EHO. Ensure all drawers and inserts are consistently at 4 deg C or less and that Daily temperature recordings are being taken by staff.
