Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Walk in cooler heavily soiled, cooling unit and fans soiled. Walls, floors and ceiling has accumulations of food debris and particulates. Surfaces are worn and in state of disrepair Walk cooler has significant odors.
Correction: Clean entire walk-in cooler and disinfect. Repair surfaces of walls and ceiling to me smooth and easily cleanable.
Sanitation plan records for daily, weekly, monthly tasks not maintained.

Corrective action taken.
Walk-in cooler floors, walls and ceiling have been cleaned.
The exterior of equipment has been cleaned.
Door handles and surfaces maintained.
Lighting improvements in Fumehood/Canopy made.
Seat area maintained.
Floors cleaned, missing tile areas repaired using concrete, ensure flooring is non-slip.
Corporate sanitation plan in use, as discussed sanitation plan additions will be site specific
Submit information on walkin cooler renovations/repairs, process if installation, material use and food protection control measures. Repairs to be complete as per reference document Retail and food services code.
