Follow-up Inspection:
- Level of sanitation and organization has improved significantly - excellent work!
Meat slicer has been cleaned and sanitized. Ensure meat slicer is cleaned and sanitized after each use or every 4 hours.
All areas that needed cleaning have been thoroughly cleaned, especially:
*Underneath 3-compartment sink
*Ventilation canopy for cookline
*Floor throughout kitchen
*Inside of upright freezer (near walk-in cooler)
*Underneath stove and deep fryer
*Behind both chest freezers
- Walk-in cooler is organized so that:
Raw meat products are stored on lower shelves and separate from ready-to-eat and cooked foods.
All containers have lids before double-stacking.
All food items have a food-grade cover.
- General organization on shelves has improved.
- Equipment and big pots are no longer stored directly on the floor.
