Hot holding unit (onions and mac & Cheese) at 62 C. OK. Suggest increasing the 'set' number on thermostat to ensure product remains above 60 C. at all times. Area below syrups and dry storage cleaned up. Thank you. Paper towel at all handwash stations. Operator provided cleaning instructions for swirl machine. Review.
