Observation (CORRECTED DURING INSPECTION): No containers of sanitizer were made yet. Premises had been operating and preparing food since opening. Operator made sanitizer at time of inspection.
Corrective Action(s): Ensure sanitizer is made at the start of each shift prior to food handling/preparation.

Comments

Hand wash stations were fully equipped with hot/cold running water, soap and paper towel.
All coolers 4C or less (walk in cooler, prep cooler unit, sliding two door drink cooler unit...etc).
Chest freezer -22C
All menu items are made per order - no hot holding available.
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Both back doors were closed at time of inspection. *Broken screen door to be repaired if back door will be left open*
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
Meat slicer appeared clean at time of inspection.
Low temperature dish washer had not been turned on for the day. Operator turned on, ran and checked dish washer at time of inspection. Dishwasher had 50ppm chlorine.
All foods appeared protected (ie. stored off the ground, covered..etc)
