Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers (walk-in and top inserts for prep line) maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- Walk-in freezer maintained below -18 degrees Celsius (0 degrees Fahrenheit).
- Hot holding (meatballs, marinara sauce and soups) maintained greater than 60 degrees Celsius (140 degrees Celsius).
Daily temperature records well maintained.
3-compartment sink used for manual warewashing.
Concentration for QUAT sanitizer at dispenser = >200 ppm.
Concentration for QUAT sanitizer in spray bottles and bucket = 200 ppm.
All food items covered and protected from contamination.
All food and dry storage items stored at least 6 inches off the floor.
Overall cleanliness and maintenance of facility very good at the time of inspection.
