Observation (CORRECTED DURING INSPECTION): Lack of approved surface sanitizer at the time of the inspection.
Corrective Action(s): Prepare bleach sanitizer at 100ppm chlorine concentration and store in spray bottles to sanitize food contact surfaces (ie counter tops).

Comments

- General sanitation is satisfactory.
- Main handwashing station in the kitchen supplied with hot/cold running water, soap, and paper towels.
- High temperature dishwasher reached 78.9C at the plate's level during the final rinse cycle.
- Dry storage area has adequate space and wire racks. All boxes and food items must be stored min 6inches (15cm) off the floor to facilitate cleaning.
- No signs of pest activity.

Temperature Control:
- All coolers in the main kitchen and dry storage area maintained at < or = 4C.
- All freezers in the main kitchen and dry storage area maintained at < or = -18C.
- Ensure to keep up to date on temperature logs. This will be verified during the next routine inspection.
- Hot holding units not in use at the time of the inspection. Ensure that the temperature is < or = 60C at all times.
