Temperature of refrigeration units, hot holding units and dishwasher are satisfactory. Sanitizer is detected in the buckets for wiping rags and dishwashing sink. Remove unused equipment from kitchen and storage room. Remove the fan that it is on the counter in front of the handwashing station (sandwich making area). Place it or mount it so that it is not blocking the sink.
