Observation (CORRECTED DURING INSPECTION): Dishwasher was not properly sanitizing dishes. Rinse cycle only reached 56C at the dish surface.
Corrective Action(s): Do not use this dishwasher until it has been repaired and is capable of reaching 71C at the dish surface (or 82C on the dishwasher's rinse temperature gauge). All dishes to be rewashed in the dishwasher upstairs (banquet kitchen).

- Quats sanitizer solution available at 200 ppm in sanitizer pails and spray bottles
- Coolers were maintaining temperatures of 4C or colder
- Freezers were maintaining temperatures of -18C or colder
- Hot-held food items were measured at 60C or hotter.
- No food held at buffet tables at time of inspection - lunch service had ended. All leftovers from buffet table are discarded.
- Proper thawing of frozen foods noted - in coolers or under cold, running water.
- Food storage practices were satisfactory.
- Equipment maintained in sanitary conditions.
- General sanitation was satisfactory
- No signs of pest activity noted at time of inspection.
- Temperature records well maintained and up to date.
