Follow up to Rpt # MBEK-AUVRPY.

Hot holding internal temperatures at 60 degrees C or more. Probe thermometer is available on site for internal temperature checks.
Raw and ready-to-eat food items are properly organized in walk in cooler to protect from potential contamination.
Cooled potentially hazardous foods were probed at an internal temperature of 4 degrees C or less in the walk in cooler. As per discussion with operator, foods are being portioned into smaller portions/layers to allow for rapid cooling prior to being transferred to large volume containers. Obtaining one or more ice wands for cooling was also discussed as another possible option.
Kitchen hand washing station was supplied with hot and cold running water, liquid hand soap, and single use paper towels.
Slicing equipment was stored in sanitary condition in a clean bin.
Note: Walk in cooler fan and ceiling have been cleaned since previous inspection. Any unfinished surfaces (e.g. where paint is chipped) will still require finishing or replacement to provide a surface that is smooth, impervious to moisture, easy to clean, and suitable for its intended purpose.
