Observation (CORRECTED DURING INSPECTION):
Duct tape was found on walls and equipment, and cardboard was found lining shelves or on the floor of the walk-in-cooler. Duct tape and cardbaord is NOT food grade, sealed, or cleanable.
Corrective Action(s):
Remove all the duct tape and cardboard from walls, equipment and floors immediately.

Observation:
There is a hole in the wall behind the prep table, beside the salad cooler. The wall is no longer food grade and could be a entry point for pests.
Corrective Action(s):
Repair the hole so the wall is smooth, sealed/painted, level, cleanable and durable.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; thermometers present; and temperatures recorded daily (reviewed records).
- Quats sanitizer in spray bottles was 200ppm strength.
- FoodSafe certified staff present.
- Valid permit decal present, but permit not posted. The health permit shall be posted for the public to view, if it is lost, a replacement permit shall be obtained through our office.
- All foods stored 6" off the floor on shelves; foods stored in food grade containers; covered; dated coded; labeled; and stored in groups to minimized cross contamination.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- 3-compartment sink present for warewashing. Take-out and single-use items being followed.
