Observation (CORRECTED DURING INSPECTION): Smaller sanitizer buckets measured at 50-100ppm quat concentration. Concentration should be at 200ppm to be able to adequately disinfect food contact surfaces.
Corrective Action(s): Replace small sanitizing trays with new sanitizer solution. Ensure that sanitizer is at 200ppm or more by regularly testing with the ecolab strips and replacing solution when necessary.
