Observation: Alot of items observed storing on the ground. Boxes of bottled pop observed on the ground; Unwrapped pizza boxes stored on ground; food boxes stored on ground in walk-in cooler, and food buckets stored on ground in walk-in cooler.
Corrective Action(s): All products (food or non-food) must be stored at least 6 inches above ground to facilitate cleaning, and for pest monitoring.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed in facility. Heavy areas include corner behind mixer, front pop storage (droppings observed next to bottled beverages), floor under front shelving racks, and under dishwashing sinks. Pest control has been visiting bi-weekly.
Corrective Action(s): Remove droppings, sanitize areas, and monitor. Follow recommendations written on pest control reports. Sanitation is key.

Observation: Bottled pop observed storing outside on the hallway where back door leads to.

Note:
1. Facility is only keeping temperature log of walk-in cooler and 2-door stand up cooler. All coolers (including prep cooler, topping cooler) should be monitored and recorded in log, per food safety plan.
2. It is apparent that facility does not have enough space (both cooler storage and dry storage. All coolers are at capacity at time of visit (9:30am) and another batch of delivery just arrived from supplier. Delivery frequency currently is 3x per week. Increase frequency to every other day or everyday to combat storage issue. Additional storage room may be required in the future if daily frequency does not work.
3. Facility has added equipment such as shelving racks at the front retail area. This will be discussed at next inspection after original approved plan is reviewed at the office.
4. Purchase Quats test strips to test sanitizer concentration. Do not rely on supplier to check once per week.
