Sanitizer 100ppm chlorine in bucket made during the inspection (at sushi prep station).
Bleach in supply at sushi station and servery.
Ensure that wiping cloths are submerged in sanitizer when not in use.
Be sure to wipe down with sanitizer when not using cutting boards and at least every 2hrs with continuous use.

Washrooms are fully supplied for hand hygiene.
Servery station is fully supplied for hand hygiene and is well organized and clean.
