Observation (CORRECTED DURING INSPECTION): 4 boxes of eggs sitting at room temp beside a standing cooler.
Corrective Action(s): Ensure all eggs are stored at 4 C or less. Relocate into cooler immediately. Eggs are potentially hazardous foods and if kept over 4 C for more then 4 hours can allow for pathogen growth.
Operator says the eggs were delivered today and are usually placed in the cooler immediately.
If eggs are found to be above 4 C for more then 4 hours next inspection they will be discarded.

Observation: Mouse droppings noted around back dishwashing sink, behind equipment and shelving.
Pest control devices onsite.
Corrective Action(s): Ensure all pest droppings are cleaned up and areas sanitized. Monitor for pest activity and report to pest control technician. Pest control provided by Orkin every 2 weeks. Reports not kept onsite. Ensure a copy of pest control reports are kept onsite for review by EHO during future inspection. Email most recent report to EHO.

Observation: Large "divider" unit stored in staff washroom.
Corrective Action(s): Ensure all equipment not required for operation is removed from premise to allow space for required equipment.
