*According to the operator, a new floor will be installed in the kitchen in a few weeks. Ensure the floor material is heavy duty, non-absorbent and easy to clean.
Floor wall junctions must be coved to promote easy cleaning.

Following items must also be addressed (ASAP):

1. Refinish the dishwasher loading table with washable finishes such as stainless steel. The backsplash must be be washable such as FRP board or stainless steel.
2. Ensure all tables used within the premises are easily cleanable and impervious to moisture.
3. Recommended changing the cabinet doors and floors.

* Ice maker requires through interior cleaning.

Upright cooler below 4 C.
Preparation cooler at 3.4 C.
Hot holding of soup > 60 C.
Wiping cloths stored in 100 ppm chlorine bleach solution. Do not put dirty wiping rags in chlorine bleach sanitizer.
Dishwasher reached 73 C during final rinse cycle.
