As previously noted. Same concerns viewed.

- Meat slicer: Food debris noted. Meat slicer once again, not properly cleaned and sanitized. Meat slicer to be cleaned and sanitized immediately and after each use. Ensure all staff are properly trained on the cleaning and sanitization procedures for the meat slicer.
- Wiping cloth storage: No sanitizer detected. Air bubble noted in dispensing line. All wiping cloth storage buckets are to be refilled immediately by hand. Maintain ~ 200 ppm. Monitor.
- Clean all areas as previously discussed: Garbage storage room. All garbage, recycling and composting items are to be stored in covered, rodent proof containers. Inside all prep lines, behind dough mixer, etc. As discussed.

A reinspection will be conducted on Tuesday May 15, 2018. All items are required to be addressed.
