304 - Premises not free of pests [s. 26(a)]
Observation:
Observed fruit/drain flies in the premises. Flies can contaminate food when they land on food.
Corrective Action(s):
Detailed cleaning of the whole premises is required to be completed to eliminate the flies.
- The walls, from the floor to 3 feet high, require to be scrubbed clean. Ensure this is done ona weekly basis to remove food stains and debris.
- The floor along the base of all walls (beneath equipment, prep tables, shelves, etc.) requires to be scrubbed clean. Ensure this is done on a weekly basis (or more frequently) to remove food and debris.
- Sink waste pipes, found under the sink or tables, and the undersides of sinks require to be scrubbed clean. Ensure this is done on a weekly basis to remove accumulated food and debris.

Observation:
There is accumulated food, grease, and dust on various surfaces in the kitchen, such as:
- The ceiling tiles and the upper walls of the kitchen have accumulated dust.
- Walls, from the floor to 3 feet up, behind prep tables, equipment, shelves and racks have food stains and debris.
- Floors along the base of walls have accumulated food debris and water.
- Undersides of prep tables and sinks have food debris and grease.
- The waste pipes, of sinks, have accumulated food debris and water.
Corrective Action(s):
Wash and clean the mentioned areas to remove the dust, food stains, and accumulated food debris and grease. Increase the frequency these areas are being cleaned, it is recommended to be done at least weekly.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The light bulb in the walk-in-cooler is burned out. It is too dark to safely work in the cooler and to see what is dirty and needs cleaning.
2) The hot water tap, at the kitchen hand washing sink, connot be completely turned off. Hot water is constantly dripping and this is a water source for pests.
3) Light fixture in the kitchen is missing a cover.
Corrective Action(s):
1) Immediately replace the burned out light bulb with a new one.

2) Repair or replace the hot water tap so it can completely turn off the hot water and it doesn't drip.

3) Purchase and install a new light cover to prevent broken glass from dropping into food.

Comments

A routine inspection was completed:
- Coolers 4C; freezers -22C; hot holding units above 60C; and thermometers present.
- Hand washing sink stocked with liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher had a [Cl2] between 50-100ppm during the rinse cycle. Test strips present and tested every morning.
- Wiping cloths stored in buckets of bleach sanitizer. [Cl2] was 50ppm, this is too low. Mix 1 Tbsp (capful) of bleach to 4L of hot water, and change this every 2-3 hours. During the inspection, staff made a new sanitizer solution and the [Cl2] was 200ppm.
- Foods stored in food grade containers, covered, foods stored in groups with raw proteins separate and/or below RTE foods; and foods stored 6" off the floor on shelves, racks, or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- Valid, FoodSafe certified staff present.
- General sanitation level requires improvement. See mentioned areas and completion dates.
- Fruit/drain flies observed in the premises. Increase cleaning frequency of hard to reach areas, and do detailed cleaning of all surfaces on a weekly basis or more.
- Exhaust canopy and filters are clean. Next professional cleaning/service due in November 2023, as per sticker.

NOTE: Minor structural improvements being done in the front service area by the buffet tables (not in use). Floor is being replace; walls will be finished/sealed with a new coat of paint or wallpaper. Owner has scheduled a contractor to complete the work.
