3. Scoops for dry good stored in bulk bins with food.
4. Several items in the walk-in cooler/freezer stored on the floor
Corrective Action(s): Required operator to follow corrective actions
1. Re-station fly traps so that they are not directly above food prep area
2. Install a proper light bulb coverage in case they shatter and contaminate the food
3. Scoops are to be stored outside of the bin. Remove all scoops, clean then sanitize all scoops prior to re-use
4. Re-organize the cooler so that all items are off the ground

Overall sanitation is satisfactory; slight food and grease accumulation noted under deep fryer. Ensure to clean the area daily
Hand washing station stocked with liquid soap and paper towel
Hot and cold running water available at all sinks
High temperature dishwasher in good working order; detected 72.2 C at plate level after final rinse cycle
Bleach sanitizer available on site and in use; detected 200 ppm of residual chlorine in the spray bottle as well as sanitizer bucket
All coolers at 4 C or lower; all freezers at -18 C or lower; all hot holding units at 60 C or higher
Ice machine maintained in sanitary condition
Washrooms maintained in sanitary condition
Dry storage area in the back needs organization. Large number of non-potentially hazardous food items stored on floor by deep freezer. Ensure to have the area re-organized to facilitate easier cleaning.
