Observation (CORRECTED DURING INSPECTION): REPEAT OBSERVATION: Small pan of cooked vegetables (38C) and 6 tin foil wrapped packages of garlic bread (56C) were found to be held <60C (140F).
Corrective Action(s): Vegetables discarded, garlic bread reheated.
Ensure that all hot potentially hazardous foods are held >60C at all times.

Observation: REPEAT OBSERVATION: metal inserts and pans in the BOH were found to be greasy on the outside surfaces.
Corrective Action(s): Ensure that all equipment and utensils are thoroughly washed, rinsed, then sanitized to remove all grease and food debris.

Observation: Surface sanitizer solution measured 0 ppm chlorine in spray bottles.
Corrective Action(s): ensure that sanitizer is made fresh daily to 100 ppm chlorine. Do not use lemon scented bleach.

Observation: Middle oven used as hot holder for garlic bread. dial is broken and operator is unable to keep accurate ambient temperature
Corrective Action(s): Obtain oven thermometer for this unit and ensure that products inside are maintained >140F

=Walk-in coolers (L3C, R2C) and salad cooler (2C) measured < 4 degrees C, and chest freezer measured -18 degrees C
=Pasta hot holding (67C), meatball hot holding (71C), chicken hot holding (70C) measured > 60 degrees C
=3 compartment sink with sink plugs available for manual dishwashing. Operator able to demonstrate manual warewashing method
=Dedicated prep sink available for food preparation
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered, however observed 1 tray of raw chicken stored above container of vegetables. Always store raw chicken below ready to eat foods such as vegetables.
=No evidence of pest activity noted at the time of inspection
