Observation: 1 undercounter cooler recorded at 10C. No cold potentially hazardous food was stored in the cooler. Operator is aware of the issue and has contacted the technician.
Corrective Action(s): Please ensure that cooler is able to maintain a temperature of 4C or below. Do not store any cold potentially hazardous food in it until it has been serviced.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Prep coolers (x2) recorded at 4C and 3.7C
- Stand up cooler in the back at 4C
- 2x stainless steel freezer at -12C and -19C
- No hot holding observed at the time of inspection.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.

Sanitation & Maintenance:
- Hand wash stations (x4) were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of QUATS noted at 200ppm.
- High temp mechanical dishwasher reached 72C on plate level during rinse cycle.
- 2 compartment dishwashing sink available for manual dishwashing of large utensils.
- Utensils and tongs were found in sanitary condition.
- No visible signs of pest activity observed at the time of inspection.

Administrative:
- Operating permit was available onsite.
- Operator has valid FoodSafe Level 1 certificate.
