Observation: The back door cannot completely close and the screen is broken.
Corrective Action(s): Ensure that the back door is fixed or replaced within 2 weeks so that it can close completely.

Observation: The fume hood has a buildup of grease. The operator stated that it will be cleaned by a professional company on Tuesday.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The booster on the high temperature dishwasher is not working properly. The final rinse temperature ranged from 67 to 69 C. However, the dishwasher has been connected to a chlorine solution and this is achieving 50 ppm chlorine at the plate level. This is a temporary solution.
Corrective Action(s): Ensure that the booster is fixed within one month.
