Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] (Pizza prep cooler table condiment inserts ranged in temperature from 9 C to 12 C. Discussed with staff the length of time various inserts stored in unit. Some foods exceeded 2 hours some were less than 2 hours.)
Comments

Rail cooling section of prep cooler thermometer adjusted lower. More frost at outer edges of inserts visible. Product temperatures in rail section ranged from 0.5 to 3.5 C. Ambient air temperature much better at less than 4 C. Thank you!
Probe thermometer in use, but needs calibration as discussed as it is not accurate.
