-Coolers are below 4 degC -Freezers are below -18 degC -Rice was being hotheld at 70 degC -Hand sink and washroom sinks are fully equipped -Dishwasher rinse temperature is 74 degC at plate level -200ppm bleach solution is available in a labeled spray bottle. -Soup was cooling down at room temperature. It had been stored at room temperature for about half an hour, as per operator. Soup temperature was 45 degC. The soup would be placed in the freezer after another half an hour of cooling at room temperature. As discussed, keep stirring the soup to facilitate cooling.
