Observation:
The back door was open for air circulation. No screen was installed to keep out flies.
Corrective Action(s):
Purchase and install a screen door or curtain to keep flies out.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
The 3-compartment sink in the back area has leaking drain pipes, buckets are catching the leaking water. Pooling water will attract and harbor pests.
Corrective Action(s):
Repair or replace the damaged pipes so water no longer leaks out.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 3C or colder; freezer -11C; hot holding units above 60C; thermometers present; temperatures not checked or recorded.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; stored in groups with raw meats separate from RTE foods; and 6" off the floor on shelves.
- No expired foods for sale or in use. FIFO rules being followed.
- General sanitation level is adequate. Back area is less cluttered, keep working on removing broken, unused or extra items not used for the business on a daily basis.
- No signs of pests. Glueboards used for monitoring.
- FoodSafe certified staff present.
- Staff use utensils to handle foods.
- Microwave used as secondary cook step for donair meats.
