Observation (CORRECTED DURING INSPECTION): Wiping cloth at front server station was stored in a mixture of orange cleaner and bleach solution.
Corrective Action(s): Do not mix bleach with any cleaner or detergent, as detergents/cleaners can reduce the strength of the sanitizer. Mix 1 tsp of bleach with 1 litre of water for proper concentrations.

Comments

- All hand wash stations were supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer available in sanitizer bucket in back kitchen and in sanitizing sink at 200 ppm
- Three compartment sink available for manual dishwashing. Maintained in sanitary condition
- Ice machine observed to be clean and free of any mould/slime/biofilm. Cleaning log in use - good.
- All coolers were maintaining temperatures of 4C or colder
- All freezers were maintaining temperatures of -18C or colder
- No hot holding was being done at time of inspection
- Accurate thermometers available. Temperature logs up to date and well maintained.
- Food storage practices satisfactory
- Beverage and ice cream machines observed to be clean at time of inspection. Ensure nozzles/dispensers are cleaned and sanitized daily. Follow manufacturer's instructions for cleaning and sanitizing of machine interiors.
- General sanitation satisfactory
- No signs of pest activity noted
