Observation: 1) Prep cooler in kitchen was serviced as per operator.
Air temperature checked at 0.3 deg. C
2) Operator said he will buy a thermometer for the dishwasher to ensure final rinse temperature reaches 71 deg. C at the plate by tonight.
In the meantime, ensure dishes are being soaked in 100 ppm chlorine solution for 2 minutes then air dry, until proper/accurate monitoring method is provided.
