Observation (CORRECTED DURING INSPECTION): * Sanitizer was not working at beginning of inspection as it had depleted; operator had to get some fresh sanitizer in bucket for storing wiping rags (quaternary ammonium sanitizer at 200 ppm concentration)
Corrective Action(s): * Ensure sanitizer active and ready to use at all times during operation-- change sanitizer solution every 1-2 hours and check it is active using test strips for that sanitizer (eg. quat. ammonium test strips)

Observation: * Cold-holding side of buffet was not working properly at time of inspection and was at 14'C-- pershible foods were discarded(eg. yogurt sauce, etc); Also, freezer was not working at time of inspection-- no food stored inside-- operator to repair this freezer
Corrective Action(s): * Repair cold-holding buffet to ensure it maintains 4'C/40'F or colder; ensure freezer unit repaired and maintained at -18'C or colder at all times
