Observation: 1) Cubed tofu stored in its original container and stacked on top of another.
2) Raw egg mixture observed in the glass sliding door cooler.
3) Raw meat stored above and right beside vegetables in walk-in cooler.
4) Rice scoop stored in stagnant water.
Corrective Action(s): 1) Ensure all foods are properly covered to avoid contamination. If to stack food on top of another, ensure to provide protection in between.
2) Guidelines for pooling of eggs provided and explained at this time.
3) All raw meats/seafoods should be stored below ready-to-eat foods (i.e. vegetables, cooked foods). Reorganize the walk-in cooler.
4) Ensure to store scoop in ice or a sanitized empty container. Storing scoop in stagnant water will promote pathogen growth.

Observation: Skewered meats stored in cardboard boxes in the walk-in freezer. Opened can of evaporated milk observed in the front cooler. Repeated violation.
Corrective Action(s): Ensure all food products are transferred to/stored in food grade containers only.

Observation: Few yogurt containers in use to store food. Operator had advised the containers were washed using the detergent at the front sink.

Routine inspection conducted:
-Handwash stations adequately supplied.
NOTE: Ensure to replenish liquid soap immediately once empty. Do not turn down the hot water.
-Refrigeration temperatures satisfactory. Hot-holding temperature satisfactory.
-Thermometers available for temperature monitoring.
-High temperature dishwasher achieved 71.7'C at the plate level after final rinse.
->100ppm chlorine solution available in a labelled spray bottle.
-Dry storage area satisfactory.
NOTE: Ensure the handle of scoops are not in contact with food.
-No evidence of pest activity observed at this time.
-Ventilation canopy hood overdue for professional cleaning. Operator had contacted the company.
-General maintenance and sanitation of the facility satisfactory.
