Observation (CORRECTED DURING INSPECTION): During time of inspection, no chlorine sanitizer solution available for disinfecting food contact surfaces

Corrective Action(s): Ensure chlorine sanitizer solution is always available for sanitizing food contact surfaces, concentration must at 200ppm in spray bottle

Observation (CORRECTED DURING INSPECTION): During time of inspection, the following observations were made:
1) Food containers were not covered and protected from contamination
2) Bags of un-peeled onions stored on floor in back storage area
3) Some inserts stacked on top of each other
4) Electrical cord touching food
Corrective Action(s): 1) All food products in facility must be covered or sealed with lids to protect foods from contamination
2) NO food items are to be stored on the floor, MUST be stored at least 6" off the floor
3) NO inserts can be stacked on top of each other, if stacked a clean food grade barrier must be used
4) Ensure to be mindful of any non food grade ancillary equipment touching food products

Observation (CORRECTED DURING INSPECTION): Small white chest freezer measured at 1C, operator informed that freezer was not plugged in securely leading to temperature increase
Corrective Action(s): ALL freezers must be maintaining temperatures at -18C or below
Ensure all equipment is in good working condition

Observation: During time of inspection, some mouse droppings observed behind small freezer located in the front, some entry points apparent

Observation: During time of inspection, the following observations were made:
1) Moderate food debris build up underneath and between equipment (i.e., underneath shelving in walk-in cooler) and on common touch areas (i.e., handles of line/prep coolers)
2) Dough mixer in need of cleaning due to debris/ flour build up
3) Back storage area in need of re-organizing and cleaning
Corrective Action(s): - Ensure all hard to reach areas are cleaned on a frequent basis
- Through deep cleaning required throughout facility

Observation: During time of inspection, paper towels not located in dispenser
- Water jugs were in very close proximity to handwashing station, splatter may occur into drinking water when washing hands
Corrective Action(s): - Ensure paper towels are always available in paper towel dispenser and that handwashing stations are always equipped with hot/cold running water, liquid soap and paper towels
- Ensure water jugs are not placed by handwashing station
