Observation: 1) Chemical dishwasher had no sanitizer. Dishware cannot be cleaned properly to remove pathogens.
Date to be corrected by: Immediately
Correction: Discontinue using dishwasher until it is repaired. Wash dishes with detergent, rinse and sanitize in two compartment sink. Maintenance called by staff. Check daily.
2) Receiving line QUATS had 0ppm. Was changed by staff and had 50ppm QUATS (after 20 min). Required concentration is 200ppm for QUATS in order to achieve effective sanitation of food contact surfaces.

Correction: Increase concentration of QUATS at sanitize basket stations. Check concentrations daily.

General comments
* Facility is very clean overall. Some additional areas of cleaning required include:
- under front bar/counter; fallen rags in kitchen
- Handles of coolers/freezers/drawers
- bottom shelves of coolers/freezers
- Walls under dishwashing area
- Undersides of shelves at food prep areas
* Reminder to change tin foil on equipment daily if this material is to be used.
- All coolers at 4C or less
- All freezers at adequate temperatures
- Glasswasher had 12.5ppm iodine
- No pests observed at inspection. Pest control comes every 10-14 days.
- FOODSAFE certified staff present
- Foods protected from contamination
- Items in cooler were organized; raw meats at bottom shelf and ready to eat vegetable on top shelf
- Fumeheads cleaned and maintained
- Ice machine well maintained, free of mould + rust
- Soap and paper towel available at handwashing stations
* Replace missing ceiling tile at receiving line/kitchen hallway
