Routine inspection
Temperature control:
- Food in walk-in cooler is at or below 4C. Separate Thermometer provided in the cooler. Raw material separated from cooked.
- Food in walk-in freezer is at or below -18C. Separate thermometer provided in the cooler.
- Upright cooler temperature measured at 3C in the midst of defrosting.
- Under the counter coolers are at or below 4C.
- Temperature monitoring log maintained. Temp. log is to be kept updated daily.
- Probe thermometer available. Ensure to sanitize the probe before measuring temperatures in cooked food.

Sanitation:
- Door seals in cooling units are to be cleaned and sanitized frequently.
- Sanitizer QUAT measured at 200 ppm in sanitizer buckets with wiping clothes stored in the solution.
- Prep-sink/ pot washing sink usage were discussed. Thorough cleaning and sanitizing between tasks is to followed to reduce the risk of cross contamination.
- General sanitation is overall good. No obvious sign of pest activity observed at this date.
- Dish washer registered above 71C at the dish surface.
- Hand washing stations are equipped with hot/cold running water liquid soap and paper towels. Staff hand washing observed at the time of inspection.
- Customer washrooms are maintained.
- Staff washroom maintained.
