Observation (CORRECTED DURING INSPECTION): Various pasta items stored < 4 C on line cooler, following internal temperature taken: penne 11 C, fettucine 9 C, toretllini 10 C, taboli 10 C.
Corrective Action(s): All potentially hazardous items discarded. Undercompartment of cooler observed to be frozen over. Staff advised that technician has already been contacted and is scheduled for today. Regardless, potentially hazardous foods must be stored < or = 4 C, alternatively, > or = 60 C at all times. You have been warned on several occasions before. Correction order issued.

Observation: A box of chemical and paint stored below three compartment sink. The lid of a paint can observed to be severely rusted with liquid pooling on top.

Walk-in cooler (by chest freezer) 12 C surface temperature --> only equipment and whole produce/fruits stored. Staff advised that the unit was noted to be malfunctioning as of yesterday afternoon, and technician has been contacted and arranged for service today - good.

No signs of pest activity.
Operator able to verbally demonstrate proper manual warewashing procedures.
