Observation (CORRECTED DURING INSPECTION): Lack of sanitizer solution in three compartment sink.
Sanitizer solution in bucket measured to be at 0ppm. CORRECTED DURING INSPECTION.

Corrective Action(s): This is the second time in a row the facility has been open during the lunch rush without sanitizer solution.
Ticketing will occur for further violations.
Sanitizer solution MUST be available for use during the day and at concentrations greater than or equal to 200ppm QUAT.
DISCUSS THIS ISSUE WITH ALL STAFF.

Observation: Cooked rice from previous night observed to be in cooler unit at temperatures exceeding 4 degrees Celsius. Internal temperature of 8.7 degrees Celsius observed. CORRECTED DURING INSPECTION - item discarded.

Correction: Ensure staff are taught how to properly cool items. (60 to 20 degrees Celsius in 2 hours and 20 degrees Celsius to 4 in 4 hours - do not exceed 6 hours to cool items. Use shallow pans, blast cooler and leave lid open slightly to allow hot air to escape).
Ensure that staff do not leave rice in rice cooker overnight and place in cooler unit in morning.

Observation: Front hand sink paper towels are not inside machine. This has occurred for quite some time based on amount of paper towel remaining on roll (less than half the roll) and the food residual on the top of the roll of paper towels. Staff explained the mechanism for the paper towel dispensing unit is broken and is to be repaired in 1-2 days.

Correction: IMMEDIATELY have paper towel dispensing unit repaired and ensure the paper towel dispensing units are always adequately supplied.

- Sanitizer solution was not available for use by staff AGAIN - DISCUSS THIS ISSUE WITH ALL STAFF. SANITIZER SOLUTION IS TO BE AVAILABLE FOR USE AT ALL TIMES DURING FOOD PRODUCTION. FURTHER VIOLATIONS WILL RESULT IN TICKETS.
