Observation (CORRECTED DURING INSPECTION): Scoops and ladles observed stored in room temperature water. Soiled knives observed stored on magnetic knife rack holder. Soiled tongs stored on handles to oven. Interior of the microwave soiled with food debris.
Corrective Action(s):
- Ensure all utensils are cleaned and sanitized frequently.
- Ensure utensils are cleaned and sanitzed prior to putting away for storage.

Do not store scoops/ladles for dispensing sauces in room temperature water. Store in ice bath at or below 4 degrees C, hot water at or above 60 degrees C, or use a new clean one.

Observation (CORRECTED DURING INSPECTION): At the time of inspection no approved food contact surface sanitizer available for use.
Corrective Action(s): This is a recurring issues. Ensure during operation not at the end of the day an approved food contact surface sanitizer is available for use. Bleach sanitizer solution prepared by staff. Reminder: dilute 1 oz of regular unscented bleach to 1 gallon of water.

Observation (CORRECTED DURING INSPECTION): Again, designated hand wash station to the entrance of the kitchen (behind swinging doors) obstructed from use by box of garbage bags, purse, and propped open swinging door.
Corrective Action(s): This is a recurring issue. Ensure all designated hand wash stations are clear of obstructions, provided with liquid soap and paper towels at all times. Further non compliance will result in the issuance of a violation ticket.

Observation: Scoops and other dispensing utensils stored directly in dry products. Operator during inspection began to cover food products inside the walk in cooler.
Corrective Action(s): Ensure food is protected from contamination at all times. Cover food products adequately in the walk in cooler. Store all scoops and other dispensing utensils outside of dry products. Better organization is required in the walk in cooler. Numerous food containers stored on the floor. Store all food products off the floor. Correct immediately.

Observation (CORRECTED DURING INSPECTION): Back door to premise propped open using a baking rack.
Corrective Action(s): Install a screen door to prevent potential pest entry. Until then back door to premise must be left closed.

Advised by operator that sale of premise is pending. New operator is required to obtain health approval prior to taking over business and starting operation. Contact your district environmental health officer if you have any question. Application for health approval for new operator.
