Observation (CORRECTED DURING INSPECTION): Bleach sanitizer spray was too strong. Concentration could not be tested - test strip was bleached out by the solution.
Corrective Action(s): Ensure bleach is maintained between 100ppm to 200ppm to proper sanitize food contact surfaces. Concentrations in excess of 200ppm may be toxic for human health. Bleach was emptied and prepared at 200ppm at the time of inspection.

Comments

-Kitchen walk-in cooler was at 4C.
-Back walk-in cooler was at 4C.
-Walk-in freezer was at -20C.
-Chest freezers were both less than -18C.
-Upright freezer was at -8C.
-Both prep coolers were at 4C (top and bottom).
-Bar cooler was at 4C.
-Foods reheated to greater than 74C.
-Cooked sauces are rapidly cooled in the walk-in freezer, then placed into the walk-in cooler. Sauces were at 4C.
-Cooked chicken was cooled in single layers and was at 4C.
-Chemical dishwasher had a final rinse of 100ppm chlorine on the dish surfaces (minimum of 50ppm required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Kitchen bleach pails were tested at 200ppm.
-Ice machine was clean and well maintained.
-Raw meats were stored below ready-to-eat foods.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pests control operator twice per month.
-Washroom clean and well maintained. Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.

-Facility has opened for dine-in. Booth are staggered to provide more than 2 metres physical distance between booths. No more than 6 patrons per table.

-Background music was not louder than normal conversation. Music cannot be louder than normal conversation, measured at the seat closest to the music.
-Markers placed outside the facility to provide 2 metres of physical distance when customers are waiting outside.
