302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): One of the sanitizer bottles was empty. Staff wasn't sure how to make up the sanitizer solution. All employees must be versed in this. Follow directions on the sanitizer bottle for making up a 200ppm solution i.e. 1.9ml sanitizer in 946 ml water. Have a measuring cup on-site for measuring out the proper concentration of sanitizer/water.
Corrective Action(s): Provide a measuring cup for measuring out sanitizer/water. Educate staff on how to prepare the sanitizer solution for the spray bottles.

Observation: There's water pooling under the stainless steel table that's joined to the 3-compartment sink. This table is being used for air drying dishes and water is dripping on the floor and accummulating under the table.
Corrective Action(s): Mop up the water. If this issue persists, you'll be required to get overhead shelving above the dishwasher for air drying dishes.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: The lighting in the walk-in cooler is still very dim and the burnt light cover hasn't been replaced.
Corrective Action(s): This is a recurring issue. If this isn't addressed by June 30th, a Correction Order will be issued.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: There was only one employee working and they did not have Foodsafe level or equivalent certification
Corrective Action(s): In operator's absence, at least one staff on duty must have FS level 1 certification. Staff indicated that they have registered for an online course but haven't completed it yet.

200ppm quats was made available for sanitizing
Temperature log's being maintained
Three compartment method of dishwashing is being utilized. ENSURE DISHES ARE SANITIZED PRIOR TO AIR DRYING.
