Daily temperature logs are available and posted
Temperature measurement:
hot holding units are all operating at above 65C
cold holding units ( coolers are at maximum 3C and freezers are at -19C )
high temperature dishwasher 85C ( observed some external damaged from the high steam temperature - ensure to contact your maintenance service due to the safety )
At least one person per shift have a food safe lev 1 as required ( discussed expiration on the food certification on July 29 )

Convention center:
- missing counter cover - corrected at the time of inspection ( Thank you )

The following need your attention:
- cleaning the ice machine, coffee machine, counters, cooler - need to be done more frequently
- if the food is stored in the cooler than daily temperature readings need to be recorded
- ice scoop ( is missing )
- bleach or approved sanitizer need to be available on site if the food has been served from this dispensary

- paint the dry-wall around the 2 compartment sink

- dishwasher if has been used, it MUST be tested and temperature for the final rinse cycle recorded ( it has a final high rinse cycle so please just ensure that the plate temperature reaches 71C )
