Comments

Hansink was supplied with liquid soap, hot and cold running water, and single-use paper towels. 200 ppm QUATS sanitizer was available in the sanitizer pail, spray bottle, and third compartment sink unit. Ware-washing was not occurring at the time of inspection as staff was busy with food service. It was reviewed to disassemble the vegetable slicer prior to cleaning and sanitizing it. Walk-in-cooler, sandwich prep. coolers, under-the-counter cooler, and beverage coolers were at or below 4 degrees C. Walk-in-freezer was at or below -18 degrees C. Refrigeration units were equipped with thermometers. Hot-held food was at or above 60 degrees C. No signs of recent pest activity were evident at the time of inspection.
