Observation (CORRECTED DURING INSPECTION): 1) Pre-cooked chicken had temperature measured at ~52'C. Staff had advised chickens were placed in the unit at 11:00am. Discarded.
2) Chilli in warmer at front had internal temperature measured at 57'C. Temperature knob adjusted at this time.
Corrective Action(s): Ensure all hot potentially hazardous foods are stored at 60'C or above at all times.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water throughout.
-Coolers operating at/below required temperature of 4'C; Freezers operating below required temperature of -18'C.
-Hot holding units operating above 60'C.
-Temperature monitoring system in place. Records kept up to date.
-200ppm Quats available in buckets with wiping cloths. Automated dispenser at correct concentration.
NOTE: Few buckets at front being refilled at the time of the inspection. Ensure to have the buckets refilled every 2 hours.
-High temperature dishwasher achieved 74.3'C at the plate level after final rinse.
-General food storage practice satisfactory. Back area being reorganized at this time.
-Ice water for coffee stations refilled at the time of the inspection.
-No evidence of pest activity observed at this time.
-Professional pest control company contracted. Recent reports checked.
-Managers food certification checked at this time.
-Washroom handsinks satisfactory.

General maintenance and sanitation of the facility satisfactory.
