Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine detected for clean bar towel bucket. Time tracking sticker indicated the change for new sanitizer solution was overdue.
Corrective Action(s): New sanitizer solution prepared for bar towels at time of inspection. Ensure to following time tracking system.

Observation: Food debris and grease accumulation observed in the following areas:
- Floors under deep fryer
- Hard to reach areas of all equipment
- Interiors of freezers, door handles of two-door upright freezer
- Cup holder/dispenser for McFlurries
- Exterior of ice cream machine
Corrective Action(s): Thoroughly clean and sanitize all areas noted above, and do so on a regular basis to prevent build-up of grease and debris.

Comments

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution available at 200 ppm. Ensure appropriate spray bottles for sanitizer are available for use.
- Three compartment sink was properly set up for manual warewashing at time of inspection
- All coolers were maintaining temperatures at 4C or colder
- All freezers were maintaining temperatures at -18C or colder
- Hot held food items were measured to be at above 60C
- In-use utensils stored on ice - good. Ensure to wash and sanitize every 2 hours
- Time tracking stickers were in use for food items held at room temperature, including raw shell eggs and burger toppings
- Temperature records well maintained and up to date

Note: Ice machine not in use at time of inspection - observed to be clean and empty.
