209 - Food not protected from contamination [s. 12(a)]
Observation:
Found frozen sliced meats, noodles, and large pieces of meats (in freezer) uncovered or not protected. These foods could become contaminated by items touching or falling on them.
Corrective Action(s):
Immediately cover foods with saran wrap or place in a food grade bag.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) Accumulation of grease on the exhaust filters in the main kitchen. This grease could drop into food, it creates a fire hazard, and it will attract pests.

2) Accumulation of grease and debris found on the floor under the cooking equipment in the main kitchen. The grease and debris is found along the base of the walls. This will attract pests.
Corrective Action(s):
1) Remove the exhaust filters and clean them. Use degreaser to remove the grease, and then wash with hot soapy water and a scrub brush. This shall be done every month.

2) Wash the floor under the cooking equipment with a degrease, and then use hot soapy water and a scrub brush. Pull the equipment out from the wall to access the floor underneath, or have a long scrub brush to pull the grease out from the wall and under the equipment. This shall be done every day.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation:
There are cracked and missing floor tiles under the deep fryer. Water and grease are accumulating in the space where the tiles are missing. This makes it hard to clean and it will attract pests.
Corrective Action(s):
Replace all damaged and missing floor tiles with new ones, so the floor is level, durable, sealed, and cleanable.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding above 60C; and thermometers present.
- Low temperature dishwasher had [Cl2] between 50-100ppm during the rinse cycle.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach solution in cloth buckets had [Cl2] of 200ppm.
- Majority of foods were stored in food grade containers; covered; stored in groups with proteins separate from RTE foods; and foods stored 6" off the floor. Improvement needed in the mentioned areas.
- No expired foods in use. FIFO rules being followed.
- Valid, FoodSafe certified staff present.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- Owner has washed the grout in all walls, and the cupboard below the hand sink in the waitress area has been cleaned up.
- Hand sink in waitress area is stocked with liquid soap & paper towels.
- All open bags of dry ingredients are stored in food grade containers with lids, in the dry storage room.
- Food containers are made of food grade material (hard plastic, glass or stainless steel). All tin cans have been removed and no food is being stored in tin cans.
- No signs of pests.

ACTION
Clean the floor under the cooking equipment in the main kitchen, as it has accumulated grease and debris along the back wall. Clean this area every day.
Clean the exhaust filters and ensure it is done every month.
All frozen foods shall be covered or stored in food grade containers.
Repair the missing and/or damaged floor tiles under the deep fryer in the main kitchen.
