Observation (CORRECTED DURING INSPECTION): Utenils and containers that hold uentils on the rack beside the diwashing sink are not maintaied in a sanitary manner.
Corrective Action(s): Wash and sanitize the noted items. Cleaning of these items shall be incorporated into the cleaning schedule.

Comments

- Handsinks are maintained with hot & cold running water, liquid soap and paper towels
- Temperatures of refrigeration units were adequate (<4C for coolers, -18C for freezer)
* Ensure that the prep coolers are kept closed after rush hours to maintain potentially hazardous foods (ie. cheese, deli meats, cut vegetables) at 4C
- Temperature log is in place. Observed some missing days (mostly weekends)
* Ensure that the temperature is monitored and recorded during weekends as well. Staff training is required.
- 200ppm QUAT sanitizer detected at sanitizer sink compartment and spray bottle
- Foods in hot holding are kept for 30 minutes. Expired foods (foods not sold within 30 min) are kept in the cooler and donated.
