Observation (CORRECTED DURING INSPECTION): No chlorine residual was detected in the bleach sanitizer spray bottle. Staff prepared new bleach solution and recorded at 200ppm.
Corrective Action(s): To ensure adequate sanitation of food contact surfaces such as prep table and clean in place equipment, please have an approved food grade sanitizer with adequate concentration onsite during facility operation i.e. 200ppm bleach/QUATS solution.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Temperature of coolers recorded at or below 4C
- Freezers noted at or below -18C
- Hot holding unit in the front and steam table recorded above 60C

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- High temp mechanical dishwasher reached 78C on plate level during rinse cycle.
- Utensils were found in sanitary condition.
- 1 dough machine was not in use but stored on site as back up.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate (Exp Aug 1, 2023).
