Receipts for sushi fish are available. One of the old receipts from a new supplier did not specify that that the wild sockeye intended for sushi has been subject to storage temperature needed for parasite destruction. Do not obtain sushi fish from this source unless they can provide written documentation that this is so. Documentation must be kept onsite.
