Observation (CORRECTED DURING INSPECTION): Soup stock/broth was being held away from a source of heat at room temperature at the time of the inspection. The temperature of the stock/broth was 46C. This is a repeat issue from the previous inspection.
Corrective Action(s): Pot of stock/broth was discarded by the kitchen staff. Soup must be kept on heat source to maintain adequate hot holding temperature. Temperature of the soup must be monitored to ensure it is maintained at 60C or hotter. Operator said she will use hot plate to keep soups warm once cooked. If this continues to be an issue, the number of soups on the menu will need to be decreased so that there is sufficient space on the stove to ensure they are kept hot.
