Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation: Staff do not wash hands at the designated handsink in back kitchen.

Staff observed washing hands while wearing gloves.
Correction: Food handlers are to wash their hands with warm water and liquid soap for 20 seconds and afterwards dry their hands with single use towels.
Staff are to wash hands at designated handsinks.
Staff are to remove gloves before handwashing.
Comments

Donair grill in use and cooled, cooked donair not observed in cooler units.

Ensure all donair meat is cooked a second time on flat grill after shaving from donair prior to service. Twice cooked donair cuttings can be hot held at 60 C prior to service.

Old and new batches of food not observed to be mixed together.

Ensure front service food inserts are completely exhausted and replaced with new inserts with new food product.

Wiping rags in use observed stored in dilute bleach sanitizer solution.

Premise cleaning has been conducted.

Ensure daily cleaning is conducted throughout premise to maintain a high level of sanitation.

Reviewed handwashing procedures.
