Checked sanitizer concentrations (quats). Measured 200 ppm at dish sink and in spray bottle. Temperature controls good. Cooling less than 4 C and hot holding above 60 C. General sanitation is good. Floor tile and baseboards along back wall of facility beginning to deteriorate and sanitary maintenance beginning to lag. This area requires more frequent and thorough cleaning to maintain in satisfactory manner. Also, wall above dishwash sinks beginning to deteriorate. Consider long-term plan for correction. Monitor.
