301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 1. Sanitizer bucket in main food prep area with cloths submerged was tested at 100ppm Quats.
Did not observe cloths in sanitizer to be used during the length of the inspection.
Bucket with sanitizer is left on floor to the side.
2. Countertops and underequipment - food debris and spillage of coffee, water and milk.
3. Inside cabinets - coffee stains from previous spills.
4. Cups and mugs inside cabinets had coffee stains.
Corrective Action(s): 1. Immediately refill Quat sanitizer bucket to ensure it is 200ppm. Resubmerge the cloths to sanitize them.
Use the cloths.
2. Wipe up all spillage and remove food debris. Clean and sanitize all surfaces.
3. Clean and sanitize inside all cabinets. Remove and discard inventory, such as single use containers and cups that have been stained.
4. Rewash cups and mugs pulled out during the inspection that appear to have stains.

Observation: 1. Dirty coffee canister and syrup dispenser with syrup inside is being stored inside sanitizing sink.
Strawberry piece inside drain of sanitizing sink.
2. Fabricated drain pipe is capturing drips from 2 backflow preventors in the wall that is leaking water and draining into the rinse sink.
Corrective Action(s): 1. Remove, clean and sanitize dirty equipment.
Clean the sanitizing sink and remove food debris.
Ensure one way flow of dishes.
Ensure all staff are aware and trained on 2-comp sink procedures.

2. Call a plumber and fix the backflow preventor that is leaking. Remove partial pipe. If backflow preventor leakage is excessive, Township and Building Inspector should be notified.

Hand wash stations are fully supplied with liquid soap and paper towels in dispensers.
Antibacterial hand sanitizer dispensers are also available above hand sinks and main one at entrance of prep area for reheating sandwiches is empty. If made available and part of food safety plan, please ensure to refill and monitor during open hours for staff hand hygiene.

Dishwasher >71C (74.5C) for final rinse cycle. Gauge reaches above 180F for 10 seconds.

Stored food items were protected and covered.
Dry storage are is organized.

No signs of pests at the time of inspection, box traps under racks and behind ice machine noted..
