Observation (CORRECTED DURING INSPECTION): Under counter prep cooler at the prep line was at 9.2. Food were stored above 4C. some food inserts were time tracked for 2 hours and some were for 24 hours.
Corrective action: Manager moved all items that were placed in the cooler within the last 2 hours into a working cooler at or below 4C (walk-in cooler) and discarded any food that were left in the cooler for more than 2 hours. "Do not use" sign was posted on the cooler. Ensure all coolers are maintained at 4C or less.
Health rationale: All cold potentially hazardous food must be stored at 4C or less to prevent food being kept at the danger zone of 4C - 60C, where pathogen may grown and/or produce toxins.

Observation (CORRECTED DURING INSPECTION): 1. Ice machine at the front service area was observed to have a plastic wrapper inside.
2. Far-end ice machine at drive through was observed to have a bug inside.
Corrective actions: 1 & 2 staff emptied the two ice machines and cleaned and sanitized the units. Ensure to keep the ice-machines closed when not in use to prevent possible contamination.
Health rationale: Food contact surfaces must be properly cleaned and sanitized to facilitate the prevention of contamination and/or possible food borne illness.

Observation (CORRECTED DURING INSPECTION): Two fries freezers on the wall were at -8.7C and -8.9C (Internal temperatures of fries at -8.7C and -8.9C).
Corrective action: Fix or service the freezers to be able to maintain -18C or less. Move food items into a working freezer (walk-in freezer) at or below -18C.

Observation: Oil and food debris accumulation was observed under/behind and beside fryers. Manager informed that routine cleaning is done once a week.
Corrective action; Clean and sanitize areas beside and under fryers. Ensure to add hard to reach areas to the sanitation schedule and increase the frequency of cleaning.

Routine inspection conducted.
1. Temperatures
Under counter freezer at -17.2C.
Food inserts at the top of prep line time tracked for 30 minutes using the Ipad (notifies when 30 minutes are reached) and discarded.
Food inserts in prep coolers are time tracked for 2 hours or 24 hours.
Cooked meat products hot-held for 30 minutes. NOTE: Any hot-holding units for products that are not working should be clearly marked to prevent their usage.
Shake machine at 3.1C.
2 door cooler at 3C.
Hot holding at greater than 60C.
Far-end fries freezer at -16.2C.
Apple pie hot holding unit at greater than 60C.
Walk-in freezer at less than -18C.
Walk-in cooler at 3.9C.
2-door upright cooler at 3.2C.
All cold holding units are equipped with an accurate thermometer.

2. Sanitation
All hand washing stations are accessible, and equipped with hot & cold running water, liquid soap and paper towels.
